Unlike matcha, which is made from steamed green tea leaves and stone-ground into a fine powder with a fresh, seaweed-like aroma, Hojicha is roasted, resulting in a powder with a distinctively warm, toasty flavor and a light brown color.

Roasting Process

The process begins by roasting green tea leaves at high temperatures (130-140℃) for 5- 10 minutes. The leaves are carefully turned twice during roasting to ensure even heat distribution. This high-temperature roasting transforms the green tea leaves into a brown color and enhances their roasted aroma, giving Hojicha its signature toasty, cocoa-like notes. The process significantly reduces the bitterness typical of other green teas, resulting in a smooth, mellow flavor.

Grinding Into Powder

After roasting, the tea leaves are ground into a fine powder, similar to how matcha is prepared, but without the steaming process.
